My oldest daughter is a very particular eater — there are foods she really likes and foods she really hates. On some occasions, she only enjoy a dish prepared by a specific person. Pizza is one of the foods she rarely eats, unless it is the school’s weekly cheese pizza lunch OR my Escarole and Bean pizza. However, we recently discovered a new kid-friendly recipe she enjoys: Meatball Pizza Balls.

Ingredients

  • 2 balls fresh pizza dough
  • 4–6 pre-made meatballs — sliced into bite sized pieces
  • fresh mozzarella — sliced into bite sized pieces
  • marinara sauce (or your favorite sauce)
  • Flour for dusting

Instructions

  1. Allow pizza dough to sit at room temperature for at least 4 hours.
  2. Preheat the oven to 350 degrees F. Using a knife (or your own hands), separate the pizza dough into 4–6 small balls.
  3. Flour your hands to work the dough into a palm sized circle. Spoon a tiny bit of sauce on the center of the dough. Add a piece of meatball and mozzarella.
  4. Fold the dough into a calzone shape before working it into a sealed ball.
  5. Place the ball on a floured baking sheet or pizza stone. Brush the top of the ball with either olive oil or melted butter. Bake for 10–12 minutes, or until golden.
  6. Serve with a side of sauce for pizza or enjoy on it’s own!

Notes

This recipe is inspired by one that uses pre-made biscuit dough. For a more buttery taste, use canned biscuit dough instead of pizza dough.

A quick message about family dinner on school nights…

Family dinner on a school night is a priority in our house — even if it’s rushed. To make the best of the brief time we have together, I often make easy to eat meals for the family like Four Ingredient Meatball Pizza Balls. I also encourage meaningful conversations while the family eats before rushing off to extracurricular activities.

Here are some of my favorite questions to ask around the family dinner table, starting with what I call “Glow and Grow”:

  1. Glow: What was the best part of your day?
  2. Grow: What would have made your day even better?
  3. Did you laugh today? What was funny?
  4. If you could be any animal, what would it be?
  5. Favorite super hero power?
  6. If you could go anywhere in the world, where would it be?
  7. Can you guess the ingredients in the meal tonight?
